3 EASY BREAKFAST QUESADILLAS RECIPES

Breakfast is the most important meal of the day. However, with the hustles of the morning rush, many people are unable to steal some time off their busy schedules to prepare breakfast meals from scratch. Here is some good news!!! Breakfast quesadillas are a one-pan breakfast, which means that they are easy and fast to make. A bonus advantage is that they won’t make you leave your sink stuffed with dirty utensils.

SAUSAGE QUESADILLAS

INGREDIENTS

  • 2 large eggs
    • A pinch of salt and black pepper
    • 3 ounces of breakfast sausage (2 patties) (if unavailable, use regular breakfast sausage but remove the casing)
    • ¼ cup shredded cheese (mozzarella, cheddar or Mexican cheese)
    • 1 flour tortilla (8” diameter was used)

How to Make Sausage Quesadilla:

  1. In a clean mixing bowl, crack 2 large eggs and season them with a pinch of salt and pepper. Beat them thoroughly with a fork/hand mixer and set them aside.
  2. Place a large non-stick pan over medium heat and add the 3 ounces of breakfast sausage. Break them up with a spatula as you sauté and do NOT add oil because they release some oil.
  3. When the sausage is light brown and completely cooked, transfer it to a plate and reduce the heat to medium low.
  4. In the same pan, add the beaten eggs and swirl them to evenly coat the bottom of the pan. Let them cook gently and once they are nearly cooked through, sprinkle the top with about 2 tablespoons of shredded cheese.
  5. Place a tortilla directly over the surface of the egg and let it rest for about 30-40 seconds.
  6. Use a large spatula to get under the egg and gently flip it over.
  7. Add another 2 tablespoons of cheese (or to taste) over the top surface and the spread the cooked sausage over half of the quesadilla. Fold the tortilla over to close like a book and continue to sauté on both sides until golden brown.
  8. When the cheese inside is melted and the tortilla is golden brown on both sides, you can remove it from the skillet. Slice them as desired and serve.
  • BACON & EGG QUESADILLAS

INGREDIENTS

  • 2 slices bacon, chopped
    • 2 large eggs
    • A pinch of salt and black pepper
    • ¼ cup shredded cheese (mozzarella, cheddar or Mexican cheese)
    • 1 flour tortilla (8” diameter was used)

How to Make Bacon & Egg Quesadilla:

  1. Place a large non-stick pan over medium high heat and add the 2 slices of chopped bacon. Sauté the bacon until it is crisp and golden brown.
  2. Transfer the cooked bacon to a late and dub the non-stick pan with paper towels to remove the excess oil.
  3. Return the pan over medium low heat and add 2 beaten eggs with a pinch of salt and pepper. Swirl them to evenly coat the bottom of the pan. Let them cook gently and once they are nearly cooked through, sprinkle the top with about 2 tablespoons of shredded cheese.
  4. Place a tortilla directly over the surface of the egg and let it rest for about 30-40 seconds.

  • 2 slices ham, chopped
    • 2 large eggs
    • A pinch of salt and black pepper
    • ¼ cup shredded cheese (mozzarella, cheddar or Mexican cheese)
    • 1 flour tortilla (8” diameter was used)

How to Make Ham Quesadilla:
